Coleslaw sandwiches are quick, delightful, and healthy. The sandwiches are perfect for breakfast,
outings, parties, or lunch boxes. The coleslaw can be customized using nearly any vegetable of your
choice. The recipe is simple, easy to make, and delicious.
Ingredients:
For the Coleslaw:
- ½ cup eggless mayonnaise
- ½ cup shredded cabbage
- ½ cup shredded carrot
- ½ cup finely sliced onions
- ¼ cup finely chopped green bell pepper
- ½ teaspoon oregano
- ½ teaspoon white pepper powder
- 1 teaspoon lemon juice
- ½ teaspoon sugar (optional)
- salt to taste
For the Sandwich:
- 8 slices of bread (any bread of your choice like white, brown, whole wheat, multigrain)
- 3 tablespoons butter
- Coleslaw Mixture
Preparations:
Coleslaw:
- Add mayonnaise to a bowl. Add salt, sugar, white pepper powder, oregano, and lemon juice.
Whisk the mixture. - Add shredded cabbage, shredded carrot, chopped onion, and chopped green bell pepper.
- Mix it well to form a smooth consistency.
- Adjust the seasoning according to your taste.
- Cover the bowl and refrigerate the coleslaw for about 20–30 minutes to allow the flavours to meld.
Sandwich:
- Chop the edges of the bread slices and keep them on a plate.
- Spread a thin layer of butter on one side of the bread.
- Spread the coleslaw mixture on another slice of bread.
- Now, cover and press both the bread slices in such a manner that the butter layer and coleslaw
- The mixture remains inside.
Serve:
- Cut the sandwich into two triangles.
- Serve the veggie coleslaw sandwiches with tomato ketchup or pickles. You may pair them with
- some potato chips, fries, or salad.
- Serve the veggie coleslaw sandwiches with hot chocolate, milk, tea, or soup.

- You may add any other vegetables of your choice to the coleslaw salad, like sweet corn kernels,
- spring onions, lettuce, or coriander.
- You may also add some dried herbs, like thyme or basil.
- You may even lightly toast or grill these sandwiches for some extra crunch. This will prevent the
- sandwich from getting soggy.
- If you are a cheese lover, you may add shredded cheese like mozzarella or cheddar.
- Alternatively, you may use a cheese slice in between and then toast the veggie coleslaw sandwich.
